If you’ve never heard of black bean brownies then it may sound a little strange. But black beans work really well in sweet foods. That’s because they have a neutral flavor and a texture that acts as both the flour and the fat. Pair black beans with chocolate (and a few other ingredients), and you have yourself moist, brownies that are totally delectable.
Why it’s healthy
Then there’s the healthy part.. black beans are an affordable super food. They are packed with fiber, plant protein and antioxidants like anthocyanins which are apart of the flavonoid family — you know the ones in chocolate!
How to make vegan black bean brownies
There are a lot of black bean brownie recipes out there but this one is the simplest vegan one out there. Check out the recipe!
Vegan Black Bean Brownies
Ingredients
- 1
15oz can
black beans
rinsed and drained - 3/4
cup
chocolate chips
dairy-free/vegan - 3/4
cup
rolled oats - 1/4
cup
coconut oil
melted - 2
Tbsp
cocoa powder - 1
tsp
baking powder - 1/2
tsp
salt
Instructions

Blend oats in food processor to make oat flour. Set aside in bowl

Blend beans (rinsed and drained) in food processor till it becomes paste. Add the remaining ingredients and pulse a few more times.

Combine mixture with oats.

Place parchment paper to 8×8″ pan so that paper also covers the sides.

Add brownie batter to pan.

For ease of cutting, you can place in fridge to set or enjoy right away.
