This is a simple and tasty recipe for a one pot meal, the spices are fun and the same spice blend can be added to Greek yogurt with grated cucumber.
Ingredients:
- 1/2 red onion chopped
- one can of chickpeas
- one cup of frozen mixed vegetables,
- 1/4 teaspoon ginger garlic paste
- 2 cups of rice (any but basmati is my favorite for this dish)
- 4 cups of water
- a pinch of cumin seeds
spice blend – 1/4 teaspoon paprika, 1/4 teaspoon parsley, 1/4 of teaspoon chipotle pepper, 1/4 teaspoon cumin and coriander powder, salt and pepper to taste.
Method:
- mix the spice blend with a little oil, add a little to yogurt for later,
- then add a little canola or olive oil to a pan and sauté the onions and cumin seeds for about 5 minutes, add the ginger/garlic paste and the spice blend
- then add the frozen vegetables and cook another few minutes,
- add the chickpeas and rice, with the water, turn down to simmer for about 20-25 minutes, with a lid.
- check periodically to see how the rice is cooking and add a little water as needed.
This is a fun quick one pot meal and makes a great packed lunch.
