Picnicking – fANNEtastic food

The highlight of our week was going on not one but two family hikes! Had to take advantage of this gorgeous spring weather while it lasts.

Plus, hiking on weekdays is great because there’s almost no one else out on the trails (nice normally, but especially good right now obviously). We had the trails more or less to ourselves – what a treat!

I still can’t get over how green everything is right now – beautiful.

In case you’re wondering, Matt was able to join us on these hikes because he was off work this week (and last week) – he’s starting a new job on Monday and took a couple weeks off in between which has been wonderful!

Not only has it been really helpful for me to have the time and space to get my work done more easily, but it has also been fun to have the opportunity to do some weekday adventures as a family. 🙂

We packed picnic lunches for both of our hiking adventures this week which was an extra fun treat – I always love having lunch with a nice view, and not rushing home to eat.

On Monday for lunch we packed sandwiches. Mine had turkey, cheese, broccoli slaw (great way to add veggies + crunch to a sandwich), arugula, and guacamole. Delicious!

Yesterday for our hiking packed lunch we picked up sandwiches/wraps from Market 2 Market in Del Ray on our way to the trails; I got their veggie wrap with hummus and turkey.

Lunch always tastes better with a scenic view, don’t you think?

The other big food highlight from the week was Matt decided it was his mission in life to learn how to smoke ribs using our grill!

I don’t entirely know what he did, but I do know he put some sort of spice rub on it, then added some wet wood chips to the grill with just one burner on and let the indirect heat cook the ribs. Then I believe he also seared them at the end? Clearly this is not a rib grilling blog, sorry guys, that’s all I know. 😉 It took about 5 hours from start to finish – quite the project!

What I do know is they were very delicious! He even made his own homemade BBQ sauce (using a recipe or a combo of recipes he found online) since we didn’t have any on hand!

Served with sweet potato waffle fries + some broccoli.

We also enjoyed more Mexican food! We tried to get take out on Cinco de Mayo but all Mexican places were mobbed, so we waited until May 6th instead. Close enough. 😉

This was from Tacqueria el Poblano in Del Ray. Their food is really good!

Other food highlights from the week included a variation of my Sheet Pan Mediterranean Chicken Thighs with orzo… LOVE that recipe. And lots of avocado toast for breakfast!

Have a nice weekend, my friends, and I’ll see you back here on Monday!
