Peanut Butter + Chocolate Chip Granola


This simple recipe for peanut butter + chocolate chip granola is perfect with milk, yogurt or by itself as a snack!

Why does granola cost so much at the store when it’s pretty much one of the easiest foods to make. All you need are oats, a sticky sweetener, an oil or butter, and whatever other fun ingredients you’d like to add. In the case of my peanut butter + chocolate chip granola, I added those ingredients plus almonds.

The reason I came up with this recipe is because I wanted a granola that my daughter would actually eat. Oats are such an important staple in a plant-based diet. They have iron (check out my post about how to make sure your kids are getting enough iron), protein, and ultimately oats are one of the most nutrient-dense foods you can eat. But try telling that to a kid! But with a little bit of peanut butter and a lot a bit of chocolate and voila, oats are yummy!

For this peanut butter + chocolate chip granola recipe, I actually had to remake it a few times to try and get measurements. That’s because the best thing about granola is exact measurements are not that important. However, I will say, be careful how much peanut butter you add because that can burn, and also be mindful of how your oven operates. I recommend starting at a lower temperature.

Here’s how to make this peanut butter + chocolate chip granola!

Peanut Butter + Chocolate Chip Granola

Ingredients

  • 2
    cups
    rolled oats
    old-fashioned or quick cooking
  • 1/4
    cup
    creamy peanut butter
  • 1/4
    cup
    coconut oil
  • 1/4
    cup
    chocolate chips
    dairy-free
  • 1/8
    cup
    agave
    or maple syrup
  • 1/8
    cup
    almonds
    slivered or sliced

Instructions

  1. Preheat oven to 325 degrees Farenheit.

  2. Warm peanut butter and oil in mocorwave in 20 seconds increments, mixing well.

  3. Add oats, almonds and agave.

  4. Spread out evenly on parchment or silicone-lined baking sheet.

  5. Bake in oven for 15-20 minutes.

  6. Remove from the oven. Let the granola cool until it reaches room temperature.

  7. Serve immediately, or store in an airtight container at room temperature for up to 1 month.
