A simple and refreshing Summer Fruit Salsa that pairs perfectly with homemade Cinnamon Pita Chips!
Can’t believe it’s taken me this long to share this Summer Fruit Salsa with Cinnamon Pita Chips with you, but it’s finally happening! Summer isn’t over yet and I’m enjoying this fruity salsa as much as possible.
When I was in college, I worked for our campus catering services doing food prep and one of the recipes we made often was a fruit salsa. I remember it had strawberries and kiwi, and maybe some mandarin oranges, but it was always served with cinnamon pita chips. It was one of my favorite recipes to prep and I have re-created it at home many times over the years using different fruits from time to time. What doesn’t change in my fruit salsa recipes is the addition of fresh lime zest, lime juice, and a touch of honey.
This version is a little different with the addition of dragon fruit, also known as pitaya. This beautiful tropical fruit is similar in texture to a kiwi, and slightly sweet. While it doesn’t provide a whole lot of flavor to this fruit salsa, it sure does make it more visually interesting! I found this one at my local grocery store in the (very) small section of less common produce, alongside lychees, rambutan, or passion fruit. Dragon fruit is easy to prep—just cut into it and the peel is easy to remove. Dice it up in small pieces for this fruit salsa, or try using it in a smoothie along with other fruits.
How to Make Cinnamon Pita Chips
While the fruit salsa itself is a star, the homemade Cinnamon Pita Chips are just as tasty and gorgeous. Let’s take a second to appreciate the texture of these crispy chips! Holy moly, they’re so good. I used whole wheat pitas to make the chips, and prepped them by cutting each pita into four pieces, then split each pita triangle in half to get a thinner piece (i.e. a crispier chip in the end!). Each pita triangle is brushed with butter and sprinkled with a cinnamon-sugar mixture before baking in the oven for about 6 minutes.
Thanks to the strawberries, kiwi, mango, dragon fruit, and lime juice, you’ll be getting a dose of vitamin C and fiber from this Summer Fruit Salsa. You really don’t want to skip adding the fresh lime zest and juice to this recipe–it complements the fruits so well!
This fruit salsa would also be great as a topping for pancakes, waffles, or yogurt! Keep the fruit salsa stored in an airtight container in the fridge for up to 3 days and the cinnamon pita chips in an airtight container for up to 3 days.
Summer Fruit Salsa with Cinnamon Pita Chips
Ingredients
Cinnamon Pita Chips
1 tablespoons granulated sugar
1 teaspoons cinnamon
4 whole wheat pitas
2 tablespoons unsalted butter, melted
Summer Fruit Salsa
3 kiwis, diced into 1/4-inch pieces
2 cups strawberries, diced into 1/4-inch pieces
1 dragonfruit, diced into 1/4-inch pieces
1/2 mango, diced into 1/4-inch pieces
1 teaspoon lime zest
1 tablespoon fresh lime juice
1 tablespoon honey
1. Preheat oven to 400 degrees F. Mix together sugar and cinnamon in a small bowl. Set aside.
2. Prepare pita chips by cutting each pita into four equal pieces, then split each pita triangle in half to get a thinner piece. Place each pita triangle on a large baking sheet, being sure to not overlap them. Brush each pita triangle with butter and sprinkle cinnamon-sugar on top. Place baking sheet in the oven and bake for 5-6 minutes. If chips aren’t quite crispy yet, bake for an additional 1-2 minutes.
3. To prepare fruit salsa, combine all of the diced fruits together in a medium size bowl. Add lime zest, lime juice, and honey. Mix well. Keep refrigerated until ready to serve.
Notes
Keep the fruit salsa stored in an airtight container in the fridge for up to 3 days and the cinnamon pita chips in an airtight container for up to 3 days.
