This recipe is easy AND delicious! It’s also very easy to customize based on what veggies you have available at your local farmer’s market. Simply chop, grill, and enjoy!

Ingredients
- 1 zucchini, cut into 1/2 inch pieces
- 4 medium red potatoes, whole
- 1 medium onion, cut into 1/2 inch pieces
- 3 plum tomatoes, cut into 1/2 inch pieces
- 1/2 of a green bell pepper, cut into 1/2 inch pieces
- 1/2 of a red bell pepper, cut into 1/2 inch pieces
- 2 tablespoons chopped parsley, chopped coarsely
- 1 sprig of rosemary, chopped coarsely
- 1/4 cup olive oil
- dash of red pepper flakes, to taste
Instructions
1. Bring a medium pot of salted water to boil. Boil potatoes for 5 minutes, or until just soft. Remove from heat and cut into 1/2 inch pieces when safe to touch.
2. Combine all ingredients in a medium bowl and season with salt and pepper to taste; toss and set aside.
3. Lay a large piece of aluminum foil flat- make sure that it is large enough to hold all of your veggies.
4. Transfer veggies from bowl to foil. Bring opposite ends of the foil together and seal.
5. Place veggie foil pack on a grill on medium heat. Grill for 5 minutes on one side, flip, and then leave to grill for another 5 minutes.
6. Remove from heat and remove veggies from the foil packet once it is safe to touch. Serve and enjoy!
