This is a fun little cake, love the drizzle icing with citrus juice it keeps the cake so moist.
Ingredients:
- juice of 1/2 a grapefruit and 1/2 a lime
- save some grated peel and the other 1/2 of the grapefruit for the drizzle
- 4 oz butter
- 4 oz sugar
- 4 oz self raising flour
- 2 eggs
- 2 tablespoon bakers sugar
- hot water
Method:
- cream the sugar and butter till light and fluffy
- mix in the eggs and flour and the grapefruit and lime juice
- bake at 375 for 20-30 minutes
- let the cake cool
- then mix bakers sugar with hot water and the grapefruit juice and peel, drizzle over the cake and dust with confectioners sugar.
- enjoy with a cup of tea.
I made this with my daughter now 12, can you believe it I started this blog when she was a baby.
