1. Toasted pumpkin soup

Velvety and smooth, sweet and savory, this perfectly balanced roasted pumpkin soup freezes well and can be reheated within minutes.
What makes this soup so hearty and satisfying is the addition of cannellini beans. After warming up, I just add a dash of yogurt and a few pieces of bacon. YUM!

2. Porcupine meatballs

These porcupine meatballs are a family favorite. My husband not only loves them, but also the children.
And with two fussy little eaters, the rich, tasty tomato sauce hides all of the vegetables I put in those delicious meatballs superbly. If only my children knew! To prepare quickly, I then put them in the slow cooker, where they continue to cook for five hours. When they’re done, I put them in freezer containers and off I go!
